This bright Ethiopian green coffee from Benti Neka is rare for being certified organic. Although most Ethiopian farmers naturally engage in organic farming, few go through the formal certification process.

Benti Neka, located in West Guji, is a washing station that specializes in washed coffee. Ripe, sorted cherries from farms at elevations of 1,900 to 2,200 masl are pulped using a disc pulper and fermented in cement tanks for 36 to 48 hours to remove mucilage. The pulped coffee is then dried for seven to nine days. Once the parchment coffee reaches a moisture content of 10-12%, it is stored in labeled conditioning bins until it is ready for the dry mill.

Roasting and Taste Profile:
  • Roast Level: Suggested light to medium roast, Ethiopian washed coffees shine at lighter roast levels, preserving the floral and citrusy characteristics. A darker roast would mute these delicate flavors and introduce more chocolate and caramelized sugar notes, but you might lose the origin’s unique brightness.
  • Taste Notes: Honey, Lemon & Lime, Pear, Tea-like
  • Q-Grade: 86.5
  • Body: Light
  • Acidity: Bright

IS YOUR MACHINE NOT HOT ENOUGH?

  • Verify that you are getting 120-122 Volts to the roaster without any extension cords.  
  • The ambient air temp is not below 55*F.  Cool temps will result in low heat output.
  • Make sure your roast profile includes lowering the fan speed as the beans roast to increase the chamber temperature.  
  • Running too few beans can result in heat not building up in the roast chamber.  Minimum of  3 Scoops, 3 OZ, or  85 Grams for both SR540 and SR800.
