Worku Buche’s Kadela wet mill is located in the Aroresa woreda at the eastern tip of Sidama. Smallholders with farms at elevations of 1,900 to 2,000 meters above sea level contribute coffee sorted under Worku’s careful supervision. Named after the river flowing through Aroresa, Kadela is a family-owned business where Worku applies over two decades of experience in the coffee industry. 

In addition to Kadela, he operates four other wet mills and one dry mill in Sidama. Worku supports smallholders across over 250 hectares, adding value to their coffee through various processing methods, including natural and washed, allowing Sidama coffee to reach over 75 global consumer countries.

Varieties and Processing:
  • Variety: Primarily composed of heirloom Ethiopian coffee varieties, offering a diverse and complex flavor profile unique to the region.
  • Processing: 

    Natural- Ethiopian green coffee is celebrated for its vibrant fruit and floral flavors, characterized by excellent acidity and sweetness. Notable growing regions include Yirgacheffe, Sidama, and Guji, each offering unique cup profiles.

    Most Ethiopian coffee is naturally processed, requiring minimal resources. Only the ripest cherries are harvested and dried whole in the sun. Once they reach optimal moisture, they are hulled to separate the fruit from the beans. This method produces sweet, intense flavors with a strong fruit-forward profile.

Roasting and Taste Profile:
  • Roast Level: Suggested light to medium roast, emphasizing bright acidity, floral, and fruity notes. Experimentation with roast levels allows customization from a bright light roast to a balanced medium roast.
  • Taste Notes: Lychee, Pomegranate, Brown Spice, Chocolate, Cane Sugar, Hibiscus
  • Q-Grade: 85.75
  • Body: Light
  • Acidity: Medium

IS YOUR MACHINE NOT HOT ENOUGH?

  • Verify that you are getting 120-122 Volts to the roaster without any extension cords.  
  • The ambient air temp is not below 55*F.  Cool temps will result in low heat output.
  • Make sure your roast profile includes lowering the fan speed as the beans roast to increase the chamber temperature.  
  • Running too few beans can result in heat not building up in the roast chamber.  Minimum of  3 Scoops, 3 OZ, or  85 Grams for both SR540 and SR800.
